Palestinian Hummus Recipe


A cherished dish at Palestinian tables and across the Middle East and North Africa. This delightful dip has become a favourite world wide in its all varieties. This version is inspired by @manelleazmi 


1 can (400g) chickpeas
1 lemon (cut in half)
1 garlic clove (peeled)
30g tahini  ½ tsp cumin
1 tsp paprika
1 tsp sumac
10g parsley or coriander
Salt to taste


Boil the chickpeas for 5-10 minutes, then transfer them into a blender along with the hot water. Add some cold water and blend.
Once blended, add all the ingredients (excluding the lemon) and blend again.
Portion onto a plate, squeeze the whole lemon over the hummus, and drizzle with olive oil.
Enjoy with warm pita bread.
